Our Honey

We make honey from two hives in Montclair, New Jersey. We never pressure-filter or heat our honey to process it, so you taste everything that’s good about honey including local pollen and a delicate aroma unlike any commercial honey. Sometimes this is called raw honey. We try to bottle two or three times a year. Each bottling is limited to a single extraction and has a unique flavour related to the hive, the season, the weather and a mix of flowers that will never come again.

We bottled our Spring 2011 harvest on father’s day. We made 72 bottles. This honey is light and distinctly floral. We bottled Summer 2011 on August 6th and made 36 bottles. Though this is still a light-colored honey, it’s got a distinct spicy aftertaste. We have some of both bottlings left.

Our bees are Carniolans and Carniolan hybrids–a gentle bee that’s a good honey producer and great for urban neighbourhoods. We use Integrated Pest Management to keep our bees healthy, so there are no hard chemicals in the hives.
